Garden Scramble
This easy savory meal is the perfect meal for breakfast lunch & dinner! It’s also a wonderful way to use the veggies in your garden that you just don’t quite know what to do with.
You'll Need
3 Organic Eggs
1 Bell pepper
3 Jalapeños
2 Hungarian Peppers
1 Poblano Pepper
1 Onion
Soyrizo
Corn or flower tortillas
Sriracha *optional
Method:
Gather you’re veggies (anything you have in the fridge or garden is fine), for this scramble, I used Bell peppers, Jalapeños, Hungarian Peppers, Poblano Peppers, and onions.
Dice up your veggies & peppers then place it all in a hot skillet.
Sauté your veggies until tender.
Add frozen hash browns or fresh diced potatoes. Cook until potatoes are golden brown.
* While potatoes are cooking season your eggs with garlic powder, onion powder, salt, and pepper, and whisk until well incorporated.
Add soyrizo and egg to the pan.
Sauté until eggs are scrambled.
Place your scramble in a serving container and heat your tortillas on the skillet.
And that’s it! Now it's time to enjoy this yummy garden scramble. I added a squeeze of Siriacha, but that’s up to you!
